Zucchini and Garlic Reindeer

 

Zucchini and Garlic Pasta with loads of Parmesan and Garlic. Home grown zucchini, basil and garlic. Very satisfying indeed.

Our pasta is reindeer shaped - as you do a few days before Christmas (we bought ours in IKEA). You can use normal shaped pasta though. Spaghetti is good.


 

Chop your zucchini into cubes and sauté in olive oil with plenty of garlic. Add salt and pepper.

Cook your reindeer in water until al dente and drain. Add loads of grated Parmesan and some torn basil leaves. When the zucchini is soft, serve on top of the pasta and sprinkle with extra Parmesan. Yum.

  1. I need a recipe like this as I have loads of home grown zucchini!! will make some tomorrow I think, perhaps with a little bacon.
